Quick Macaroni and Cheese
This recipe from a 1951 cookbook is so simplistically of its time, with the most basic of cheese and only salt and pepper for seasoning.
Ingredients:
2 cups uncooked elbow macaroni
One 12 oz. can and one 5 oz. can of evaporated milk
½ pound grated American or cheddar cheese, plus 2 oz. (I use shredded sharp cheddar)
1 tsp. salt
¼ tsp. pepper
Instructions:
Preheat oven to 325 degrees.
Add the salt to a pot of water, bring to a boil, and cook the macaroni for the time indicated on the box.
Heat the evaporated milk in a saucepan until small bubbles appear around the edge of the pan. Remove from heat, let cool slightly, then blend in most of the cheese, setting aside about two ounces of it.
Butter a baking dish. Place the cooked macaroni in the dish, then pour the cheese mixture over it. Stir to combine well. (It will be very liquid-y. Don’t worry, baking will firm it up.) Top with remaining cheese.
Bake for 30 minutes.
Servings: 8.
